Will I know when Google or a customer changes something on my listing?

Yes, once Google notifications are set up under Automation. You can be told about new reviews, updated reviews, Google's own suggested changes to your profile and new photos or videos from customers. Google's changes are shown for you to review and are never reversed automatically, so you decide whether to accept them or draft a correction.

Which performance numbers does the app show?

It shows Google's own figures: impressions on Search and Maps by device, website clicks, call-button taps and direction requests, over any past range up to 366 days, plus monthly search-keyword impressions. The screen reminds you that a call tap is not a completed call and that a blank value is not a zero.
